  • 1 cup unsalted butter room temperature
  • 2.5 cups powdered sugar
  • 3 tbsp Greek yogurt adds light creaminess
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  • In a large bowl, beat butter and sugar until light and fluffy, about 3–4 minutes.
  • Beat in eggs one at a time, followed by the vanilla extract.
  • In another bowl, whisk together flour, baking powder, baking soda, and salt.
  • Alternate adding dry ingredients with milk and Greek yogurt to the butter mixture. Mix until just combined.
  • Divide the batter evenly between pans and smooth the tops. Bake for 25–30 minutes, or until a toothpick comes out clean.
  • Cool cakes in the pans for 10 minutes before transferring to a wire rack to cool completely.
  • For the frosting: Beat butter until creamy. Add powdered sugar gradually, then mix in Greek yogurt, vanilla, and salt until smooth.
  • Assemble cake by layering frosting between and over the cakes. Decorate with flowers, berries, or gold flakes.
  • Chill cake for 30 minutes before serving for clean slices and set frosting.

Notes

Use room-temperature ingredients for the fluffiest texture. Keep decoration minimal for a modern look, and chill before slicing for the perfect clean edge. This cake can be adapted with citrus zest or a touch of almond extract for a unique twist.
