Ingredients
  

For the Meatballs

  • 1 Tbsp Olive Oil adds moisture and enhances flavor
  • 1 lb Ground Chicken, 97/3 provides a lean protein base

For the Sauce

  • 1/2 C Swerve Brown Sugar (or dark brown sugar) adds sweetness
  • 1/4 C Buffalo Sauce introduces heat
  • 2 Tbsp Cider Vinegar balances sweetness with acidity

Preparation

  • In a large mixing bowl, combine the panko breadcrumbs, shredded Parmesan cheese, garlic powder, ground ginger, and red pepper flakes. Make sure the spices and breadcrumbs are well blended.
  • Add the ground chicken, large egg, and Buffalo sauce to the breadcrumb mixture. Gently combine the ingredients until everything is evenly incorporated.
  • Divide the mixture into 12 pieces, each weighing about 50g, and roll into meatball shapes.
  • Prepare the sauce by mixing the Swerve brown sugar (or dark brown sugar), Buffalo sauce, and cider vinegar in a bowl until well blended.

Cooking

  • Heat a large skillet over medium heat and add the olive oil. Allow it to warm slightly before adding the meatballs.
  • Cook the meatballs for 2-3 minutes until the bottoms are golden brown. Flip and cook for an additional 6-8 minutes, turning them every 1-2 minutes.
  • Once browned, pour the prepared sauce over the meatballs and gently toss as the sauce reduces, for about 2-3 minutes.
  • Ensure the meatballs have reached an internal temperature of 165ºF before removing from heat.
  • Serve topped with toasted sesame seeds and sliced green onions.

Notes

For uniform meatballs, consider using a kitchen scale. Avoid overcrowding the skillet for even browning. Adjust the spice level to your preference and use a meat thermometer for accurate cooking.
