Preparation

  • Preheat your oven to 350°F.
  • In a large bowl, cream together the softened unsalted butter and sugar until light and fluffy.
  • Add in the large egg and almond extract, mixing thoroughly until well combined.
  • In a separate bowl, whisk together the all-purpose flour and kosher salt.
  • Gradually add the flour mixture to the wet ingredients. Mix gently until just combined.
  • Scoop out a tablespoon of cookie dough and roll it into a ball. Place the balls on a baking sheet lined with parchment paper, spacing them about two inches apart.
  • Use your thumb or the back of a spoon to gently create an indent in the center of each cookie.
  • Fill the indentations with your chosen jam, being careful not to overfill.

Baking

  • Bake the cookies in the preheated oven for about 12 to 15 minutes or until the edges are lightly golden.
  • Remove cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring to a wire rack.
