Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the cottage cheese and egg yolks. Whisk until smooth and well incorporated.
  • In a separate bowl, whisk together the almond flour, salt, and baking powder.
  • Gradually add the dry mixture into the cottage cheese and egg yolk blend, folding until thoroughly mixed.
  • In another bowl, beat the egg whites until they form stiff peaks.
  • Gently fold the beaten egg whites into the cheese and flour mixture.
  • Fold in the fresh blueberries until evenly distributed.

Baking

  • Line a baking sheet with parchment paper and spoon the batter onto the sheet, shaping as preferred.
  • Bake for 25-30 minutes until golden and a toothpick inserted comes out clean.
  • Allow to cool slightly before slicing.

Notes

Store in an airtight container for up to two days or refrigerate for about a week. Freeze slices for long-term storage.
