Instructions

  • In a large bowl, whisk together sugar, olive oil, and eggs until pale and slightly frothy.
  • Add milk and vanilla extract. Whisk until smooth and well combined.
  • Sift in the flour, baking powder, and pinch of salt. Gently whisk or fold until just combined.
  • Pour batter into the prepared pan. Smooth the top with a spatula.
  • Bake for 30–35 minutes, or until a toothpick inserted in the center comes out with just a few moist crumbs.
  • Cool in pan for 10 minutes, then transfer to wire rack. Cool completely before frosting or dusting with powdered sugar.

Notes

For a twist, try using melted butter instead of olive oil or adding almond extract for a subtle nutty note. Great base for birthday cakes or cupcakes too!
