Ingredients
  

For the Buckeyes

  • 2 1/2 cups confectioner’s sugar Adjust sweetness
  • 1/2 cup peanut butter Creamy texture, avoid natural peanut butter
  • 4 tablespoons melted butter Adds richness
  • 1 teaspoon pure vanilla extract Enhances flavor
  • 1/2 teaspoon kosher salt Enhances flavor
  • 1 large egg white Helps bind the mixture
  • 1 1/2 cups confectioner’s sugar Additional sweetness for consistency
  • water as needed To adjust consistency

For the Chocolate Coating

  • 8 ounces dark chocolate, chopped Avoid chocolate chips for best melting

Instructions
 

Preparation

  • In a large mixing bowl, combine the confectioner’s sugar, peanut butter, melted butter, vanilla extract, and kosher salt. Mix on medium speed until smooth.
  • Form small balls, about 1 inch in diameter, and place them on a parchment-lined baking sheet.
  • Chill the balls in the freezer for about 30 minutes.
  • Melt the chopped dark chocolate in a double boiler or heatproof bowl set over simmering water.
  • In a separate bowl, whisk the egg white until frothy. Gradually mix it into the melted chocolate.

Coating

  • Take the chilled peanut butter balls from the freezer and dip each into the melted chocolate, leaving a circle of peanut butter visible on top.
  • Place coated buckeyes back onto the baking sheet and allow excess chocolate to drip off.
  • Set in the refrigerator for about 30 minutes to let chocolate harden.

Notes

Store buckeyes at room temperature for up to a week or refrigerate for up to two weeks. Freeze in an airtight container for up to three months.
