Preparation

  • Wash the strawberries thoroughly under cold water, remove the green tops and blemished areas.
  • Puree the prepared strawberries in a mixing bowl until smooth, using an electric mixer or a fork.
  • Add the granulated sugar to the strawberry puree and mix well.
  • In a separate bowl, whip the cold heavy or whipping cream with an electric mixer until soft peaks form.
  • Gently fold the strawberry puree into the whipped cream using a rubber spatula.
  • Spoon the mousse into serving dishes, filling about three-quarters full.
  • Cover with plastic wrap or lids and refrigerate for at least two hours.
  • Before serving, top each dish with extra fresh strawberries.

Notes

Ensure cream is cold for better volume when whipped. Adjust sweetness based on strawberry ripeness. Don't rush the chilling step to enhance texture.
