  • 1 cup unsalted butter, melted and cooled adds richness and moisture
  • 2 tablespoons vegetable oil adds moisture for a fudgy texture

  • 4 large eggs, at room temperature provides structure and richness
  • 1 tablespoon pure vanilla extract adds flavor complexity
  • 3/4 teaspoon salt enhances sweetness and balances flavor
  • 1 cup all-purpose flour provides structure
  • 1 cup unsweetened cocoa powder, good quality intensifies chocolate flavor
  • 7 oz large semi-sweet chocolate chips or roughly chopped chocolate adds melty pockets of chocolate

Optional Add-ins

  • crushed walnuts, peanuts, almonds, pecans, chocolate chips, peanut butter chips, shredded coconut, dried fruit (cranberries, raisins, etc.) optional for added texture and flavor

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare an 8x12-inch baking pan by lightly greasing it with cooking oil spray. Line the bottom with parchment paper.
  • In a medium-sized bowl, combine the melted, cooled butter, vegetable oil, white sugar, and light brown sugar. Whisk until well blended and smooth.
  • Add the room temperature eggs and pure vanilla extract to the sugar mixture. Beat until the color lightens slightly and the mixture becomes fluffy.
  • Sift in the all-purpose flour, cocoa powder, and salt. Gently fold until just combined, being careful not to overmix.
  • Fold in about three-quarters of the semi-sweet chocolate pieces until evenly distributed.

Baking

  • Pour the brownie batter into the prepared baking pan and smooth the top. Sprinkle the remaining chocolate pieces on top.
  • Bake for 25-30 minutes for fudginess or 35-40 minutes for firmer brownies. Use a toothpick to check for doneness.
  • Allow brownies to cool in the pan for 15-20 minutes, then lift them out using the parchment paper.
  • Cool to room temperature before slicing into 16 squares.

Storage

  • Store leftovers at room temperature for up to three days or in the fridge for five days. Freeze well for up to three months.
