Ingredients
  

Brownie Base

  • ¼ cup oat flour (or almond flour) adds structure

  • ¾ cup Vanilla Greek yogurt keeps brownies moist
  • 2 large eggs binds the ingredients
  • 1 teaspoon vanilla extract adds a warm flavor

Ganache

  • ½ cup semisweet chocolate (4 ounces)
  • ½ cup heavy cream (or coconut cream) creates a smooth ganache
  • ½ teaspoon vanilla extract flavors the ganache

Instructions
 

Preparation

  • Preheat your oven to 350°F (177°C) and prepare a 9x9” baking pan by greasing it.
  • In a small bowl, combine the oat flour, cocoa powder, and sea salt, then set this mixture aside.
  • Melt the semisweet chocolate and your choice of coconut oil or butter in a microwave-safe bowl, stirring until fully melted and combined.
  • In a larger bowl, whisk together the melted chocolate mixture, granulated sugar, Vanilla Greek yogurt, vanilla extract, and eggs until completely smooth.
  • Add the dry ingredients to the wet mixture, whisking gently until just combined.
  • Fold in the chocolate chips gently.

Baking

  • Pour the batter into the greased baking pan, spreading it evenly.
  • Bake in the preheated oven for about 20 to 25 minutes, or until the top is just barely set.
  • Once baked, remove from oven and let the brownies cool on a wire rack.

Ganache Preparation

  • In a saucepan, heat the heavy cream until it bubbles over medium-low heat.
  • Whisk the chopped semisweet chocolate and vanilla extract into the warm cream until dark and smooth.
  • Pour the ganache over the cooled brownies and let it spread over the top.

Notes

Store brownies at room temperature for up to three days. They can be refrigerated for up to a week, or frozen for three months. Allow refrigerated or frozen brownies to come to room temperature before serving.
