Ingredients
  

Funnel Cake Bites

  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup milk
  • 2 large eggs
  • 2 cups vegetable oil for frying
  • 1/2 cup powdered sugar for dusting

Instructions
 

  • In a large bowl, whisk together flour, sugar, baking powder, and salt until well combined.
  • In a separate bowl, whisk milk and eggs until smooth and frothy.
  • Gradually add the dry ingredients into the wet mixture, stirring just until a smooth, slightly thick batter forms.
  • Heat about 2 inches of oil in a deep pan over medium heat. The oil is ready when a small drop of batter sizzles on contact.
  • Using a small spoon or scoop, carefully drop spoonfuls of batter into the hot oil. Do not overcrowd the pan.
  • Fry each bite until golden brown, about 1 minute per side, flipping as needed.
  • Use a slotted spoon to transfer fried bites to a paper towel-lined plate to drain excess oil.
  • While still warm, dust generously with powdered sugar. Serve immediately.

Notes

For a twist, coat bites with cinnamon sugar instead of powdered sugar. These are best served fresh and warm.
