Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the almond flour and melted coconut oil, mixing gently until crumbly.
  • Add honey or maple syrup and stir until smooth and sticky dough forms.
  • Incorporate one egg and stir until fully blended.
  • Press the dough into the bottom of a greased baking pan to create an even layer.

Baking the Base

  • Bake the base in the preheated oven until the edges are light golden brown, about 15-20 minutes.

Making the Filling

  • In a mixing bowl, whisk together the remaining eggs.
  • Gradually add sugar or sweetener, then the fresh lemon juice and zest. Mix until smooth.

Baking the Bars

  • After the base has baked, remove it and pour the lemon filling over the top, spreading evenly.
  • Return to the oven and bake until the filling is set and has a light golden top, about 15 minutes.

Cooling and Serving

  • Allow the lemon bars to cool completely in the pan before cutting.
  • Slice into squares and dust with powdered sugar if desired.
