Preparation

  • Preheat your oven to 350°F (175°C) and prepare a 9x13-inch baking pan by greasing it or lining with parchment paper.
  • In a large mixing bowl, combine the granulated sugar and lemon zest, mixing until well combined.
  • Add room-temperature butter and vanilla, beating until creamy and smooth.
  • Gradually stir in gluten-free flour blend and fine sea salt until fully combined, being cautious to avoid overmixing.
  • Gently fold in the blueberries, ensuring they are evenly distributed.
  • Pour the batter into the prepared baking pan and smooth the top with a spatula.

Baking

  • Bake in the preheated oven for 30-35 minutes or until lightly golden.
  • Prepare the topping mixture by combining granulated sugar, lemon juice, and cornstarch in a medium bowl.
  • Once the bars are done, immediately pour the blueberry topping over them and return to the oven for an additional 10-12 minutes.
  • Remove from the oven and let cool completely in the pan on a wire rack.

Finishing Touches

  • Dust the bars with powdered sugar and a mixture of lemon juice before serving.
