  • 1 tablespoon milk if needed, to adjust consistency of filling

Instructions
 

Preparation

  • Start by preheating your oven to 350°F.
  • In a mixing bowl, combine the dark brown sugar and melted unsalted butter. Blend until fully incorporated.
  • Add the honey and vanilla extract to the mixture. Stir gently until well combined.
  • Crack in the eggs and mix until fully blended.
  • In a separate bowl, whisk together the gluten-free flour, baking soda, cinnamon, and salt.
  • Gradually add the dry mixture to the wet ingredients, stirring gently to combine.
  • Gently fold in the gluten-free oats until evenly distributed.
  • Line a baking sheet with parchment paper and scoop the dough onto the sheet, spacing them a couple of inches apart.
  • Bake in the preheated oven for about 10-12 minutes or until edges are lightly golden.

Filling Preparation

  • While the cookies cool, prepare the filling. Beat together the softened unsalted butter and powdered sugar until creamy.
  • Fold in the marshmallow fluff until fully incorporated. Adjust consistency with milk if needed.

Assembly

  • Once the cookies have cooled, spread a generous layer of the filling over half of them.
  • Top each filled cookie with another cookie half and press down lightly.

Notes

Allow cookies to cool completely before adding filling. Store assembled pies in an airtight container to maintain freshness.
