Preparation

  • Preheat your oven to the appropriate temperature.
  • In a mixing bowl, combine the eggs and sugar. Whisk until light and frothy.
  • Add the Greek yogurt and gently fold into the egg and sugar mixture.
  • Sprinkle in the baking soda and mix gently into the batter.
  • Gradually add the all-purpose flour, carefully folding it in until no dry flour is visible.
  • Prepare the baking dish with a light coat of cooking spray.

Baking

  • Pour the batter into the prepared baking dish, spreading it evenly.
  • Place the baking dish in the oven and bake until golden brown and a toothpick inserted comes out clean.

Notes

Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack. Store leftovers in an airtight container at room temperature for up to 2 days.
