Ingredients
  

  • 1 cup whole-fat Greek yogurt
  • 1 tbsp honey
  • 2 tbsp cocoa powder
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • 1/4 cup dark chocolate chips or wafers 80% cacao or higher
  • chopped chocolate for garnish
  • mint leaves for garnish

Instructions
 

  • In a mixing bowl, combine Greek yogurt, honey, cocoa powder, vanilla, and salt. Stir until smooth.
  • Place dark chocolate in a microwave-safe bowl. Microwave in 30-second bursts, stirring each time until melted.
  • Pour melted chocolate into the yogurt mixture. Use an electric mixer to whisk for 60 seconds until fully combined and glossy.
  • Taste and adjust sweetness with more honey if desired.
  • Transfer mousse to ramekins or a bowl. Cover and refrigerate for at least 2 hours to set.
  • Before serving, garnish with chopped chocolate and mint leaves.

Notes

Use full-fat Greek yogurt for the best texture. Melt chocolate slowly to avoid burning. Let chocolate cool slightly before mixing into the yogurt. This dessert tastes even better the next day!
