Ingredients

  • 1 Tbsp avocado oil, or olive oil for moisture
  • 1 yellow onion, diced for flavor and texture
  • 1 lb ground turkey lean protein
  • 1 red bell pepper, chopped for sweetness and color
  • 4 cloves garlic, minced for aromatic flavor
  • 3 Tbsp chili powder for spice
  • 2 cups chicken broth for moisture and flavor
  • 1 cup salsa for kick and moisture
  • ⅔ cup white rice for body and texture
  • 1 (15-oz) can black beans, drained for protein and texture
  • 1 (7-oz) can green chilis for heat and flavor
  • 1 tsp sea salt, to taste for seasoning
  • 3 cups grated colby jack cheese for creaminess

For Serving

  • 1 ripe avocado, sliced for creaminess
  • 3 stalks green onion, chopped for freshness
  • ½ cup sour cream for creaminess
  • ½ to 1 cup salsa for added flavor

Instructions
 

Preparation

  • Preheat the oven to 375°F and lightly coat a 13” x 9” casserole dish with cooking spray.
  • Heat the avocado oil in a large skillet over medium-high heat. Add the diced onion and sauté until softened, about 3 to 5 minutes.
  • Add the raw ground turkey to the skillet. Break it into bite-sized pieces as it cooks, ensuring that most of the pink color is gone. Lightly sprinkle with sea salt.
  • In the prepared casserole dish, combine the chopped bell pepper, minced garlic, chili powder, chicken broth, salsa, uncooked white rice, drained black beans, green chilis, and sea salt. Stir well to ensure even distribution.
  • Mix in the ground turkey and onion mixture with the other ingredients. Sprinkle grated cheese evenly over the top.

Baking

  • Cover the casserole dish with aluminum foil and bake for 45 minutes.
  • After baking, carefully remove the foil. Set the oven to High Broil and broil the casserole for 5 to 8 minutes until the cheese is bubbly and light golden brown.

Serving

  • Serve with toppings like sliced avocado, chopped green onion, sour cream, or additional salsa.

Notes

This casserole can be served for breakfast, lunch, or dinner. Leftovers can easily be reheated. Pro Tips: Sear the ground turkey longer for extra flavor, use freshly grated cheese, and consider adding jalapeños for spice.
