Ingredients

Main Ingredients

  • 1 lb ground turkey
  • 4 medium potatoes, diced
  • 1 tbsp olive oil For sautéing
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium bell pepper, chopped
  • 1 tsp smoked paprika
  • 0.5 tsp dried thyme
  • Salt and pepper, to taste
  • 0.25 cup chopped fresh parsley For garnish
  • 0.25 tsp red pepper flakes (optional) For a spicy kick

Instructions

Preparation

  • Heat the olive oil in a large skillet over medium heat. Once hot, add the chopped onion and minced garlic. Sauté for about 2-3 minutes, or until the onion becomes translucent and fragrant.
  • Add the diced potatoes and chopped bell pepper to the skillet. Stir to coat the vegetables and cook for about 10 minutes, stirring occasionally.
  • Incorporate the ground turkey into the skillet, breaking it into small crumbles. Cook until fully cooked through while stirring frequently.
  • Once the turkey is cooked, add smoked paprika, dried thyme, salt, and pepper. Stir and cook for another 5-7 minutes until flavors blend and potatoes become tender.
  • Remove from heat and sprinkle with fresh parsley. If desired, add red pepper flakes before serving.

Notes

Serve with steamed vegetables or a mixed greens salad. Enjoy leftovers in wraps or pitas.
