Ingredients

Cookie Dough Base

  • 1.5 cups almond flour provides structure and a nutty flavor
  • 0.25 cups cashew butter (or peanut butter) adds creaminess and richness
  • 0.25 cups maple syrup offers natural sweetness and moisture
  • 2 tbsp melted coconut oil contributes moisture and helps bind
  • 1 tsp vanilla extract enhances overall flavor
  • 0.25 tsp salt balances sweetness and enhances flavors
  • 0.25 cups chocolate chips adds sweetness and texture

Chocolate Topping

  • 1 cup chocolate chips (for topping) provides a rich chocolate layer
  • 1 tsp coconut oil (for topping) adds sheen and smoothness
  • Flaky sea salt (optional) offers a finishing touch of flavor

Instructions

Preparation

  • Start by gathering your ingredients and choosing a baking dish or tray. Line it with parchment paper to create an easy release for the bark.
  • In a mixing bowl, combine the almond flour, cashew butter (or peanut butter), maple syrup, melted coconut oil, vanilla extract, and salt. Stir until a smooth and somewhat thick dough forms.
  • Gently fold in the 1/4 cup of chocolate chips into the dough until evenly distributed.
  • Spread the cookie dough mixture evenly into the prepared baking dish, pressing down firmly with a spatula.

Topping

  • Melt the additional chocolate chips along with the teaspoon of coconut oil in a microwave-safe bowl until smooth and glossy.
  • Drizzle or pour the melted chocolate over the cookie dough base, spreading gently to cover completely.
  • If desired, sprinkle flaky sea salt over the chocolate layer.

Cooling and Serving

  • Place the baking dish in the refrigerator for about 30-60 minutes or until the bark is firm.
  • Remove the bark from the dish and peel away the parchment paper. Cut it into squares or bars for easy serving.
  • Store any leftovers in an airtight container in the refrigerator or at room temperature.

Notes

Make sure to mix ingredients thoroughly to avoid clumps. Use pressure when spreading the dough but be gentle to avoid overworking it. Experiment with different nut butters and toppings as desired.
