Preparation

  • Preheat your oven and grease your baking pan thoroughly with cooking spray.
  • In a mixing bowl, combine the eggs and sugar and whisk together until well mixed.
  • Add the Greek yogurt to the egg and sugar mixture, stirring until smooth.
  • Sprinkle in the baking soda and gently fold it into the mixture.
  • Gradually add the all-purpose flour and fold it into the wet ingredients without overmixing.
  • Pour the batter into the greased baking pan, spreading it evenly.

Baking

  • Place the baking pan in the preheated oven and bake until golden, checking with a toothpick for doneness.
  • Remove the cake from the oven and let it cool in the pan for a few minutes.
  • Run a knife around the edges and turn the cake out onto a wire rack to cool completely.

Notes

For the best results, use room temperature ingredients and ensure not to overmix the batter. Feel free to add vanilla extract or lemon zest for added flavor.
