Preparation

  • In a mixing bowl, combine the almond flour and the first portion of maple syrup, mixing until uniform.
  • Whisk the four large eggs in a separate bowl until well blended.
  • Gradually add the second portion of maple syrup to the eggs, whisking until thicker and creamier.
  • Slowly add the lemon juice to the egg and syrup mixture, whisking consistently.
  • Incorporate the remaining almond flour, baking powder, and sea salt into the egg mixture, stirring until smooth.
  • Gently fold in the lemon zest, ensuring it's evenly distributed.
  • Pour the batter into the prepared baking dish and smooth the top.

Baking

  • Bake the bars in the preheated oven until the edges are firm and golden, while the center remains slightly tender.
  • Allow the bars to cool completely in the baking dish before cutting into squares and dusting with powdered sugar if desired.

Use fresh lemon juice and zest for best flavor. Allow bars to cool completely before slicing to help them firm up. Store in an airtight container in the fridge for about a week.
