Ingredients
  

Wet Ingredients

  • 2 large eggs helps bind the bars
  • 0.5 cup pumpkin puree not pumpkin pie filling
  • 0.33 cup pure maple syrup natural sweetener
  • 0.25 cup coconut sugar unrefined sweetness
  • 0.5 cup melted coconut oil dairy-free moisture
  • 1 tsp vanilla extract

Dry Ingredients

  • 0.66 cup oat flour measured after blending oats
  • 0.75 cup rolled oats not quick or steel-cut
  • 1 tbsp pumpkin pie spice cinnamon, nutmeg, ginger, cloves
  • 0.5 tsp baking soda

Optional Add-Ins

  • 0.5 cup chocolate chips optional, or use chopped nuts

Instructions
 

  • Preheat oven to 350°F (175°C) and line an 8×8 baking pan with parchment paper.
  • In a large bowl, whisk together the eggs, pumpkin puree, maple syrup, coconut sugar, melted coconut oil, and vanilla until smooth.
  • Add the oat flour, rolled oats, pumpkin pie spice, and baking soda. Gently fold to combine into a thick batter.
  • Stir in the chocolate chips or other add-ins if using.
  • Pour the batter into the prepared pan, smoothing the top. Sprinkle a few extra chocolate chips on top.
  • Bake for 24–26 minutes or until edges are golden and a toothpick comes out clean from the center.
  • Let cool in the pan for at least 10–15 minutes before slicing. Bars will firm up as they cool.

Notes

These bars are freezer-friendly, gluten-free, and easy to customize with nuts or dried fruit. For a vegan version, replace eggs with flax eggs (2 tbsp flaxseed meal + 5 tbsp water).
