Instructions
 

Preparation of Dough

  • In a medium mixing bowl, combine the whole grain spelt flour and white sugar. Stir until well combined.
  • Add active sourdough discard, milk, einkorn flour, egg, and softened butter to the bowl. Whisk until smooth and free of lumps.
  • Sprinkle a clean surface with flour and knead the dough gently for about 5 minutes.
  • Shape the dough into a ball, place it in the bowl, cover with a kitchen towel, and let it rest for about 30 minutes.

Preparation of Filling

  • In a separate bowl, combine the softened cream cheese, white sugar, lemon juice, vanilla extract, and a pinch of salt. Beat until smooth and creamy.

Shaping Kolaches

  • Preheat your oven to the appropriate temperature.
  • Divide the rested dough into equal-sized pieces, roll each into a ball, and flatten it into a small disc.
  • Place a tablespoon of the cream cheese filling in the center of each disc and fold the edges over to seal securely.

Baking

  • Arrange the filled kolaches on a parchment-lined baking sheet. Brush the tops with melted butter and sprinkle with sugar.
  • Bake in the preheated oven for 20 to 25 minutes until golden brown.

Ensure your sourdough discard is active and knead only until smooth. Allow kolaches to rise slightly after sealing for a lighter texture.
