Preparation

  • Preheat your oven to 350°F and prepare the baking pan by lining it with parchment paper.
  • In a large mixing bowl, combine the melted butter and packed brown sugar, stirring until smooth.
  • Add the egg, egg yolk, and vanilla extract, whisking until well mixed.
  • In a separate bowl, mix together the baking powder, salt, and all-purpose flour.
  • Fold the dry ingredients into the wet mixture gently until just combined, being careful not to overmix.
  • If desired, fold in the semisweet chocolate chips.
  • Pour the batter into the prepared pan and spread evenly.

Baking

  • Bake in the preheated oven for 25 to 30 minutes until the edges are golden brown and the center appears puffed but slightly underbaked.
  • Allow the blondies to cool in the pan before lifting them out using the parchment paper and slicing into squares.

Notes

For best results, use room temperature eggs and avoid overmixing the batter. Store leftovers in an airtight container.
