Instructions
 

  • Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  • In a medium bowl, whisk flour, baking powder, and salt until well combined.
  • In a large bowl, beat butter and sugar together until light and fluffy, about 3–4 minutes.
  • Beat in eggs one at a time, then add vanilla extract (and optional zest or almond extract).
  • Alternate adding the dry ingredients and milk to the butter mixture, starting and ending with flour. Mix gently until just combined.
  • Divide batter between the pans. Smooth tops and tap gently to release air bubbles.
  • Bake 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool completely on wire racks before frosting.
  • To make frosting: Beat butter, powdered sugar, milk, and vanilla until creamy. Frost the cake and decorate as desired.
