For the cake

  • 3 cups all-purpose flour provides structure

  • 2 pieces bananas, diced contributes natural sweetness and moisture
  • 1 cup chopped walnuts plus more for garnish

For the cream cheese frosting

  • 4 ounces cream cheese, at room temperature creates a rich frosting
  • 2 Tbsp unsalted butter, at room temperature adds smoothness to frosting
  • 1 Tbsp vanilla paste or extract enhances frosting flavor
  • 1 1/2 cups sifted confectioner’s sugar adds sweetness and texture to frosting
  • to thin as needed milk or cream adjusts frosting consistency

Instructions
 

Preparation

  • In a large bowl, sift together the flour, sugar, salt, baking soda, cinnamon, and nutmeg.
  • In another bowl, combine the beaten eggs, vegetable oil, and vanilla paste or extract. Whisk until well blended.
  • Pour the wet mixture into the bowl with the dry ingredients. Stir until just combined.
  • Gently fold in the crushed pineapple, diced bananas, and chopped walnuts.
  • Preheat your oven as needed, then grease the Bundt pan thoroughly.
  • Spoon the batter into the prepared Bundt pan and smooth the top.

Baking

  • Place the Bundt pan in the oven and bake until the cake is golden and a toothpick inserted comes out clean.
  • Once baked, let it cool in the pan for a bit, then invert it onto a wire rack.

Frosting Preparation

  • Blend the cream cheese, softened butter, and vanilla paste or extract until smooth and creamy.
  • Gradually mix in the sifted confectioner’s sugar and adjust with milk or cream to your desired consistency.
  • Frost the cooled Bundt cake, allowing some frosting to drizzle down the sides.
  • Sprinkle with chopped walnuts on top as a garnish.

Ensure all ingredients are at room temperature before starting. Do not overmix the batter to maintain a light texture. Allow the cake to cool fully before frosting.
