Ingredients
  

For the cookie bars

  • 1/2 cup unsalted butter, melted and slightly cooled adds richness
  • 1 cup old fashioned oats for chewiness
  • 1 cup all-purpose flour, spooned and leveled provides structure

  • 1 tablespoon molasses (or honey) provides moisture and subtle flavor

For the icing

  • 1/2 cup powdered sugar, sifted for icing
  • 1-2 tablespoons whole milk to thin icing
  • 1/4 teaspoon vanilla for icing flavor

Instructions
 

Preparation

  • Preheat your oven to 350°F.
  • Prepare an 8 x 8-inch baking pan by greasing it lightly, or line it with parchment paper.
  • In a large mixing bowl, combine the melted butter with the granulated sugar and light brown sugar. Whisk until smooth.
  • Add the egg, vanilla, and molasses (or honey) to the butter and sugar mixture. Blend until fully incorporated.
  • In a separate bowl, stir together the all-purpose flour, old-fashioned oats, baking soda, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Pour the batter into the prepared baking pan, spreading it evenly.

Baking

  • Bake in the preheated oven for 20 to 25 minutes, or until the edges are golden brown.
  • Allow the bars to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Icing

  • Prepare the icing by combining the sifted powdered sugar, milk, and extra vanilla in a small bowl. Mix until smooth.
  • Once the bars have cooled, drizzle or spread the icing over the top and allow to set before slicing.

Notes

For best results, allow melted butter to cool slightly before combining with sugars. Don’t skip letting the bars cool before icing. Store in an airtight container to maintain freshness.
