  • 2 cups all-purpose flour provides structure

Preparation

  • Preheat your oven to 400°F.
  • In a mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk to blend evenly.
  • Add the cubed cold butter to the flour mixture. Use a pastry cutter or fork to blend until it resembles coarse crumbs.
  • Pour in the heavy cream, followed by the egg and vanilla extract. Stir gently until the dough comes together.
  • Turn the dough onto a floured surface and press into a 1-inch thick circle.
  • Slice the dough into eight equal wedges or use a biscuit cutter for round scones.

Baking

  • Line a baking sheet with parchment paper and place the scone wedges on it, leaving space between them.
  • Bake for 15-20 minutes, or until tops are lightly golden and firm to the touch.

Notes

Serve warm with butter, jam, or clotted cream. Store in an airtight container for up to two days or refrigerate for a week. Can be frozen for up to three months.
