Ingredients
  

For the Shortbread Base

  • 1 Cup Unsalted Butter, at room temperature Provides moisture and a rich flavor
  • ½ Cup Light Brown Sugar Adds sweetness and a slight caramel flavor
  • 1 Teaspoon Vanilla Extract Enhances overall flavor
  • 2 Cups All-Purpose Flour Gives structure and texture
  • ¼ Teaspoon Salt Balances sweetness

For the Topping

  • ½ to ¾ Cup Jam of any flavor Adds moisture and sweetness

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line an 8×8 inch square baking pan with parchment paper.
  • In a mixing bowl, cream together the unsalted butter, light brown sugar, and vanilla extract using an electric mixer until light and fluffy.
  • Gradually add in the all-purpose flour and salt to the butter mixture, mixing until crumbly but able to hold together when pressed.
  • Transfer about three-quarters of the prepared dough into the lined baking pan and press down firmly to create an even base.

Assembly

  • Spread your choice of jam evenly over the shortbread base.
  • Crumble the remaining shortbread dough over the jam layer.

Baking

  • Place the pan in the preheated oven and bake for 25 to 30 minutes until lightly golden around the edges.
  • Allow to cool completely in the pan before using the parchment to lift it out and slice into desired shapes.

Notes

Store in an airtight container at room temperature for up to a week, or refrigerate for about two weeks. These bars freeze well for up to three months.
