Cake Batter

Instructions
 

  • Preheat oven to 350 °F and lightly grease an 8‑inch square pan.
  • For the topping: Combine 1 cup baking mix, ½ cup brown sugar and 1 tsp cinnamon. Cut in cold butter until crumbly. Stir in optional nuts or raisins.
  • For the cake batter: Combine 1½ cups baking mix and ¾ cup granulated sugar. Cut in cold butter until it resembles coarse crumbs.
  • In a separate bowl, whisk milk, egg and vanilla. Add to dry mixture and stir gently until combined. Don’t over‑mix.
  • Spread batter evenly in the prepared pan. Sprinkle the topping over the batter.
