Ingredients
  

Crumb Topping

  • 1/2 cup "JIFFY" Baking Mix
  • 1/3 cup brown sugar firmly packed
  • 1 tsp cinnamon
  • 2 tbsp butter cold
  • 1/4 cup chopped nuts or raisins optional

Cake Batter

  • 1 1/2 cups "JIFFY" Baking Mix
  • 1/4 cup sugar
  • 2 tbsp butter cold
  • 1/3 cup milk
  • 1 egg slightly beaten
  • 1 tsp vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease an 8-inch square pan with butter or non-stick spray.
  • In a small bowl, mix together Jiffy Baking Mix, brown sugar, and cinnamon. Cut in cold butter until crumbly. Stir in nuts or raisins, then set aside.
  • In another bowl, combine Jiffy Baking Mix and granulated sugar. Cut in cold butter until mixture resembles crumbs.
  • In a separate bowl, whisk milk, egg, and vanilla. Pour into dry ingredients and stir until just combined.
  • Spread batter evenly in the prepared pan. Sprinkle crumb topping over entire surface.
  • Bake for 25–30 minutes, until golden brown and a toothpick inserted comes out clean.
  • Let cool for a few minutes before serving warm or at room temperature.

Notes

Feel free to add your twist with fruit or chocolate chips. Cold butter and minimal mixing are key to success. Keeps well for days and freezes beautifully.
