Ingredients
  

For the Crust

  • 1 1/2 cups Granulated Sugar Sweetens while balancing tartness

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, beat together the room temperature unsalted butter, granulated sugar, and powdered sugar until creamy and smooth.
  • Gradually add in the sifted all-purpose flour to the butter and sugar mixture and mix until just combined.
  • Press the mixture firmly into the bottom of a baking dish to create an even crust.
  • Place the crust in the preheated oven for about 10-12 minutes until it’s lightly golden.

Making the Filling

  • In a separate bowl, whisk together the eggs until frothy.
  • Slowly incorporate the lemon juice, lemon zest, and granulated sugar into the whisked eggs and mix well.
  • Gently fold in the sifted all-purpose flour into the lemon mixture until smooth.

Baking

  • Pour the lemon filling over the warm crust evenly.
  • Return the dish to the oven for another 20-25 minutes.
  • Once done, allow the lemon bars to cool before dusting with powdered sugar.
  • Cut the bars into squares or rectangles once they have completely cooled.

Notes

Use room temperature butter for a smoother base. Ensure to check the baking time to prevent overbaking.
