Glaze Ingredients

  • 1 cup powdered sugar (or Swerve for sugar replacement) creates a sweet coating
  • 2 Tbsp lemon juice adds brightness to the glaze
  • 2 tsp lemon zest intensifies lemon flavor in glaze

Instructions
 

Preparation

  • Start by preparing your baking pan. If you’re using a muffin tin, grease it lightly with coconut oil or line it with paper liners. For a baking dish, simply grease the bottom and sides.
  • In a mixing bowl, combine the coconut oil and stevia. Using a whisk, mix these two ingredients together until they are well blended and smooth.
  • Add the lemon zest and lemon juice to your sweetened coconut oil mixture and whisk until evenly combined.
  • Crack the eggs into the bowl with your mixture and whisk until fully combined.
  • In a separate bowl, mix together the almond flour and salt, stirring gently.
  • Gradually combine the dry mixture into the wet mixture, stirring until just combined.

Baking

  • Pour the batter into your prepared muffin tin or baking dish, spreading it evenly.
  • Place the pan in the oven and bake until the edges are set and the top is lightly golden.
  • Allow the dish to cool in the pan for a while before transferring to a wire rack or plate to cool completely.

Glazing

  • Prepare the glaze by mixing the powdered sugar, lemon juice, and lemon zest until smooth.
  • Drizzle the prepared glaze over the cooled baked goods evenly.
  • Let the glaze set a little before slicing or serving.

Ensure your coconut oil is just melted; overmixing can affect texture. Store the baked goods in an airtight container for freshness.
