For the Icing

  • 1 cup sifted confectioners’ sugar
  • 2 tablespoons freshly pressed lemon juice (more as needed for desired texture) Adjust for icing consistency

Preparation

  • Preheat your oven and grease your baking dish.
  • In a mixing bowl, whisk together the room temperature eggs and granulated sugar until well combined.
  • Gradually add the melted butter and lemon juice, mixing until blended.
  • Sift the flour and salt into the wet mixture and gently fold using a spatula.
  • Add the lemon zest and fold until evenly distributed.
  • Pour the batter into the prepared baking dish, spreading evenly.

Baking

  • Bake until the edges are set and the center jiggles slightly.
  • Allow to cool in the dish before cutting into squares or bars.

Icing

  • Prepare the icing by combining the confectioners’ sugar with lemon juice until smooth.
  • Drizzle or spread the icing over cooled blondies and garnish with lemon zest, if desired.

Notes

Allow the bars to cool completely before icing to prevent melting. Store in an airtight container.
