Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a 9x5 loaf pan by lining it with parchment paper or greasing it with butter.
  • In a medium bowl, whisk together flour, baking powder, and salt until well combined.
  • In another bowl, combine melted butter, granulated sugar, eggs, vanilla extract, lemon zest, and lemon juice. Beat until smooth.
  • Gradually add the flour mixture to the wet ingredients while mixing on low speed, alternating with adding the milk.
  • In a small bowl, toss the blueberries with 1 tablespoon of flour to coat.
  • Gently fold the blueberries into the batter using a spatula.

Baking

  • Pour the batter into the prepared loaf pan, smoothing the top.
  • Bake for 55-65 minutes, checking for doneness with a toothpick.
  • Cool the bread in the pan for 30 minutes before transferring to a wire rack to cool completely.

Glazing

  • To prepare the glaze, whisk together melted butter, powdered sugar, lemon juice, and vanilla until smooth.
  • Drizzle the glaze over the cooled bread and let it sit for a few minutes to set before slicing.

Notes

Serve warm or at room temperature with butter or cream cheese. Store leftovers in an airtight container for freshness.
