Lemon Brownies

Ingredients
Brownie Base
- ½ cup salted butter, softened adds moisture
- ¾ cup granulated sugar provides sweetness
- 1 large lemon, zested adds bright citrus flavor
- 2 large eggs contributes structure and moisture
- 1 Tablespoon fresh lemon juice enhances citrus flavor
- ¾ cup all-purpose flour provides the base structure

Glaze
- ¾ cup powdered sugar for the glaze sweetness
- 1 ½ Tablespoons fresh lemon juice for glaze flavor
Instructions
Preparation
- Preheat your oven to 350°F and prepare an 8×8-inch pan by either spraying it with cooking spray or lining it with parchment paper.
- In a large bowl or the bowl of a stand mixer, combine the softened salted butter, granulated sugar, and the zest of one lemon. Beat until light and fluffy.
- Add the two eggs, one at a time, mixing well after each addition. Stir in one tablespoon of fresh lemon juice.
- Add the all-purpose flour and baking powder to your wet ingredients, mixing until just combined.
- Pour the batter into your prepared pan and smooth it into an even layer.
Baking
- Bake in the preheated oven for about 20 to 25 minutes until a toothpick inserted into the center comes out clean.
- Allow the brownies to cool in the pan for 10 to 15 minutes.
Glazing
- In a separate bowl, whisk together the powdered sugar, one and a half tablespoons of fresh lemon juice, and the zest from half a lemon.
- Once the brownies have cooled, pour the glaze over them, spreading it evenly.
- Let it cool completely before slicing into 16 squares.

For best results, ensure your butter is softened; don't skip zesting the lemon; allow the brownies to cool completely before glazing.
