Preparation

  • Preheat your oven to 350 degrees. Prepare a 9×13 inch pan by lining it with foil or parchment paper, allowing some overhang on the edges.
  • For the crust, combine the flour, sugar, salt, and butter in a food processor. Pulse until it resembles fine crumbs.
  • Press the crust mixture firmly into the bottom of the prepared pan. Bake for about 10 minutes until lightly golden.

Filling

  • In a mixing bowl, combine the softened cream cheese and granulated sugar. Mix until smooth.
  • Add the flour, powdered sugar, lemon juice, eggs, and vanilla to the cream cheese mixture. Stir until fully incorporated.
  • Pour the filling over the baked crust and spread it evenly. Bake for about 30 minutes until the filling is set.

Cooling and Serving

  • Allow the bars to cool in the pan for about 20 minutes, then refrigerate for at least 4 hours or overnight.
  • Once chilled, lift the bars out using the foil or parchment overhang, cut into squares, and dust with powdered sugar.

Ensure your cream cheese is softened before mixing. Do not skip the chilling step for best texture. Use fresh-squeezed lemon juice for optimal flavor.
