Preparation

  • Preheat your oven to 350 degrees Fahrenheit. Prepare a 9×13 inch pan by lining it with foil or parchment paper, leaving plenty of overhang on the edges.
  • For the crust, combine the flour, granulated sugar, salt, and butter cubes in a food processor or blender. Pulse until it resembles fine crumbs.
  • Press the prepared crust mixture evenly into the bottom of the lined pan. Bake the crust for 10 minutes.
  • In a large mixing bowl, combine the softened cream cheese and granulated sugar. Cream until you achieve a smooth consistency.
  • Add in the flour, powdered sugar, fresh-squeezed lemon juice, eggs, and vanilla. Mix until fully incorporated.
  • Pour the lemon cream cheese filling over the baked crust and spread it into an even layer. Bake for an additional 30 minutes.
  • Once done, allow the bars to cool in the pan for about 20 minutes, then transfer to the refrigerator to chill for at least 4 hours or overnight.
  • Lift the bars from the pan using the edges of the foil or parchment paper, slice into squares and sprinkle with additional powdered sugar.

Notes

Ensure your cream cheese is fully softened before mixing to prevent lumps. Allow plenty of time for chilling to help the bars set properly.
