Preparation

  • Preheat your oven to 350°F (175°C) and prepare your baking sheets lined with parchment paper.
  • In a medium bowl, combine the flour, baking soda, and salt. Whisk these dry ingredients together until well mixed.
  • In a large bowl, cream together the softened butter and sugar until fluffy and lighter in color.
  • Add the egg, lemon juice, lemon zest, and vanilla extract to the butter-sugar mixture and stir until fully incorporated.
  • Gradually mix the dry ingredients into the wet ingredients, stirring until no visible flour pockets remain.
  • If using, add the yellow food coloring to the dough and mix gently to achieve an even color.
  • Chill the dough in the refrigerator for about 10 minutes.

Baking

  • Prepare two bowls: one with the granulated sugar and another with the powdered sugar.
  • Roll the chilled dough into small balls, first coating them in granulated sugar before rolling them in powdered sugar.
  • Place the rolled cookie balls about two inches apart on the prepared baking sheet.
  • Bake the cookies for 8-10 minutes, watching for the tops to crinkle.
  • After baking, allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Store cookies in an airtight container for up to one week. For longer storage, refrigerate or freeze.
