Preparation

  • Start by preheating your oven to 350°F and preparing an 11x7-inch baking pan. You can either line the pan with tin foil or give it a quick spray with cooking spray to help with easy removal later.
  • For the apple filling, combine the chopped apples with 2 tablespoons of brown sugar and 1 tablespoon of butter in a saucepan. Cook everything over medium-low heat for about 3 to 4 minutes until the apples soften slightly but still hold their shape. Once done, take the mixture off the heat and allow it to cool to room temperature.
  • In a mixing bowl, cream the softened butter until it becomes light and fluffy, which should take about a minute.
  • Add the dark brown sugar and granulated sugar to the creamed butter. Mix well until the sugar is fully combined and the mixture looks smooth.
  • Add the eggs one at a time into the butter and sugar mixture, beating well after each addition.
  • Mix in the salt and vanilla extract until everything is well combined.
  • In a separate bowl, stir together the all-purpose flour, baking powder, and cinnamon.
  • Gradually add the dry mixture to the wet ingredients, stirring until just combined.

Assembly

  • Transfer half of the blondie batter into the prepared pan, spreading it evenly across the bottom.
  • Spoon the cooled apple filling over the first layer of batter, spreading it gently.
  • Dollop the remaining blondie batter over the apple filling, spreading it carefully to cover the apples completely.

Baking

  • Place the pan in the preheated oven and bake for about 25 to 30 minutes. The blondies are done when they are golden brown and a cake tester comes out clean.
  • While the blondies are baking, prepare the maple glaze by melting the butter, maple syrup, vanilla extract, and ground cinnamon together in a small saucepan over low heat.
  • Once blended, sift in the powdered sugar, whisking until thoroughly combined.
  • Allow the glaze to cool for about 8 to 10 minutes before pouring it over the blondies.

Serving

  • Once the blondies are out of the oven and cooled for a bit, pour the maple glaze over the top, ensuring even coverage.
  • Let it set before slicing into squares for serving.

Notes
