Instructions

Preparation

  • Preheat your oven to 350°F. Choose an 11×7 pan for even baking and line it with tin foil for easier removal later or spray it with cooking spray.
  • In a small saucepan over medium-low heat, combine the chopped apples, 2 tablespoons of brown sugar, 1 tablespoon of butter, 1/2 teaspoon of vanilla extract, and 1/2 teaspoon of cinnamon. Cook for about 3-4 minutes until apples are softened, then set aside to cool.
  • In a mixing bowl, cream the softened butter until light and fluffy, then add dark brown sugar and granulated sugar, mixing until fully combined.
  • Add eggs, one at a time, beating well after each addition. Mix in salt and 1 1/2 teaspoons of vanilla extract until smooth.
  • In a separate bowl, combine all-purpose flour, baking powder, and 1/2 teaspoon of cinnamon. Sift and gently fold this into the wet ingredients until just combined.
  • Spread half the blondie batter evenly in the prepared pan. Spoon the cooled apple filling over the batter, then dollop the remaining batter on top.

Baking

  • Bake in the preheated oven for about 25-30 minutes, or until the blondies are golden brown. Test for doneness with a toothpick.

Making the Glaze

  • In a small saucepan over low heat, melt together the 2 tablespoons of butter, 1/4 cup of maple syrup, 1/4 teaspoon of vanilla extract, and 1/8 teaspoon of ground cinnamon.
  • Whisk in the powdered sugar until smooth.

Finishing Touch

  • Let the blondies cool, then pour the glaze over top. Slice into squares and enjoy.

Notes

For best results, allow the blondies to cool completely before cutting for cleaner edges. Drain excess liquid from the apple filling to prevent a soggy bottom.
