Ingredients

For the Meatballs

  • 1 lb ground beef provides the main protein and richness
  • ½ cup Italian bread crumbs adds moisture and helps bind
  • 2 tablespoons grated Parmesan cheese introduces a savory flavor
  • 1 large egg acts as a binder
  • 1 teaspoon dried oregano adds a classic Italian herb flavor
  • ½ teaspoon dried basil enhances the aromatic profile
  • ½ teaspoon onion powder contributes subtle sweetness
  • ½ teaspoon garlic powder provides a savory depth
  • ¼ teaspoon kosher salt boosts overall flavor
  • ¼ teaspoon fresh ground black pepper adds a slight kick

For Assembly

  • 2 cups marinara or pasta sauce provides moisture and flavor
  • 4 medium sub rolls holds everything together
  • 1½ cups finely shredded mozzarella cheese melts beautifully for topping
  • 1 tablespoon chopped fresh Italian parsley or fresh basil optional, for garnish

Instructions

Preparation

  • In a large bowl, combine the ground beef, Italian breadcrumbs, Parmesan cheese, egg, oregano, basil, onion powder, garlic powder, salt, and pepper. Mix until all ingredients are evenly incorporated and roll into 1-inch meatballs.

Cooking Meatballs

  • Heat a large skillet over medium heat and add the meatballs in a single layer. Cook until browned all over, turning occasionally.
  • Drain any excess grease from the skillet.

Simmering

  • Pour the marinara sauce into the skillet with the browned meatballs. Stir to coat and reduce heat to medium-low. Simmer for about 15 minutes.

Preparing Sub Rolls

  • Preheat the broiler. Split the sub rolls down the middle and butter the insides lightly before toasting.
  • Toast the rolls under the broiler until they are lightly golden brown.

Assembling Subs

  • Spread half of the shredded mozzarella cheese over the bottom of each toasted sub roll. Place five meatballs in each roll and top with remaining mozzarella cheese.

Broiling

  • Return the assembled subs to the broiler until the cheese is melted and lightly browned.
  • Remove and optionally sprinkle with additional Parmesan cheese and chopped parsley.

Notes

Using high-quality ground beef can enhance flavor. Don’t skip the browning step; it adds depth through caramelization. Toast the rolls until just golden to prevent sogginess.
