Preparation

  • In a mixing bowl, combine the diced apples, sugar, cinnamon, and lemon juice.

Assembly

  • Place a spoonful of the apple mixture in the center of each pastry square.
  • Fold the pastry over to create a triangle shape and pinch the edges to seal securely.
  • Use the tines of a fork to crimp the edges.
  • Brush the tops of the sealed pastries with the beaten egg.
  • Arrange the mini pies on a baking sheet lined with parchment paper.

Baking

  • Bake in the preheated oven for about 20-25 minutes or until puffed and golden brown.
  • Allow the pies to cool slightly on a wire rack before serving.
