Instructions
 

Preparation

  • Preheat your oven to 350°F. Grease two 9-inch baking pans to prevent sticking.
  • In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, cinnamon, ginger, cloves, and nutmeg. Whisk until evenly blended.
  • In a separate bowl, whisk together the packed light brown sugar, vegetable oil, unsweetened applesauce, buttermilk, eggs, and vanilla extract until well combined.
  • Gradually incorporate the dry mixture into the wet ingredients. Stir gently until just combined.
  • Divide the batter between the prepared baking pans and tap lightly to remove air pockets.

Baking

  • Bake the cakes for about 30 minutes. Check for doneness with a toothpick.
  • Cool the cakes in the pans for 10 minutes, then transfer them to a cooling rack to cool completely.

Frosting

  • Beat together the softened butter and cream cheese until smooth.
  • Gradually add the powdered sugar and additional vanilla extract, mixing until fully combined.

Assembly

  • Layer one cake on a serving plate, spread frosting on top, and then add the second layer. Frost the top and sides of the cake.
