Preparation

  • In a medium saucepan, combine the sugar, milk, cocoa powder, and butter. Stir the ingredients over medium heat until the mixture starts to boil.
  • Once it reaches a rolling boil, let it bubble for a minute to help achieve the right consistency.
  • Remove the saucepan from the heat. Add in the peanut butter and vanilla extract, stirring until smooth.
  • Gradually mix in the quick-cooking oats until fully coated.
  • Line a baking sheet with parchment paper and drop rounded tablespoons of the mixture onto it.
  • Allow the cookies to cool and set at room temperature.
  • Once set, gently lift the cookies off the parchment paper and store in an airtight container.

Notes

Store the cookies in an airtight container for up to a week. They can be refrigerated for about two weeks or frozen for up to three months.
