Ingredients
  

For the Gingerbread Crust

  • 1.5 cups gingerbread cookies crushed
  • 0.25 cup unsalted butter melted

For the Cheesecake Filling

  • 1.5 cups cream cheese softened
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 0.25 tsp ground cloves
  • 1.25 cups heavy cream whipped to stiff peaks

For Decoration

  • whipped cream for topping
  • crushed gingerbread cookies for garnish
  • mini gingerbread men cookies for garnish
  • ground cinnamon for dusting

Instructions
 

  • In a medium bowl, mix crushed gingerbread cookies and melted butter. Divide into serving cups and press to form crust.
  • In a large bowl, beat cream cheese and powdered sugar until smooth. Add vanilla, ginger, cinnamon, nutmeg, and cloves. Mix until combined.
  • Gently fold whipped cream into the cream cheese mixture until smooth and airy.
  • Spoon or pipe filling over crust in cups. Smooth tops.
  • Chill in the refrigerator for at least 2–3 hours until set.
  • Top with whipped cream, crushed cookies, a mini gingerbread man, and a dusting of cinnamon before serving.

Notes

Decorate just before serving to maintain crisp textures. Use clear cups or jars for the prettiest presentation.
