Instructions
Preparation
- Begin by crushing the graham crackers into fine crumbs.
- In a mixing bowl, combine the crushed graham crackers, sweetened shredded coconut, sugar, and melted butter. Mix well.
- Divide the crust mixture evenly among serving cups or bowls and press firmly into the bottom.
Cheesecake Filling
- In a separate bowl, combine the heavy cream and half of the powdered sugar. Beat until soft peaks form.
- In another bowl, mix the cream cheese, remaining powdered sugar, and half of the vanilla extract until smooth.
- Gently fold the whipped cream into the cream cheese mixture.
- Stir in the finely diced pineapple into the cheesecake filling.
Assembly
- Spoon the cheesecake mixture over the crusts in the cups.
- Cover the cups and place them in the refrigerator for at least a couple of hours to chill and set.
Serving
- Garnish each cup with fresh pineapple and cherries before serving.
