For the crust

  • 1 cup sourdough discard (unfed, room temperature)
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 3/4 cup granulated sugar Sugar-free granulated sugar can be used as a substitute.

For the filling

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup diced peaches (fresh or canned) Fresh or canned can be used.

Preparation

  • In a mixing bowl, combine the melted butter and granulated sugar, whisking them together until smooth.
  • Add in the sourdough discard and vanilla extract, stirring gently until just combined.
  • In another bowl, mix the flour, baking powder, baking soda, salt, and cinnamon together until well combined.
  • Gradually fold the dry mixture into the wet ingredients, mixing until no white flour streaks remain.
  • Carefully fold in the diced peaches until evenly distributed throughout the batter.

Assembly

  • Pour the batter into a prepared pie dish, smoothing the top.
  • Cover and refrigerate the pie for at least 2 hours, or until set.
