Preparation

  • Begin by combining all the crust ingredients in a food processor. Blend until the mixture reaches a fine crumb consistency that holds together when pressed.
  • Spread the crust evenly in the bottom and up the sides of an 8-inch pie plate.
  • In a stand mixer, blend the softened cream cheese until smooth and creamy. Gradually add the peanut butter, vanilla extract, and liquid stevia, mixing until combined.
  • In a separate bowl, whisk the heavy cream on high until stiff peaks form.
  • Gently fold the whipped cream into the peanut butter mixture.
  • Spread the peanut butter filling into the prepared crust and smooth the top. Refrigerate for about 2 hours or until set.
  • For the chocolate syrup, whisk together the unsweetened cocoa powder, coconut oil, and sweetener until smooth.
  • Serve the pie sliced, drizzled with additional chocolate syrup if desired.
