Ingredients
  

Base Layer

  • 3/4 cup granulated sugar
  • 1 cup white Karo syrup
  • 1 cup creamy peanut butter or sunflower seed butter for nut-free option
  • 6 cups gluten-free rice krispie cereal like Nature’s Path or One Degree

Chocolate Topping

  • 20 oz dairy-free semisweet chocolate chips Enjoy Life melts smoothly and allergen-safe
  • chopped nuts optional topping for texture

Instructions
 

  • In a medium saucepan, combine granulated sugar and Karo syrup. Stir over medium heat until just boiling and sugar is dissolved.
  • Remove from heat and stir in the creamy peanut butter until smooth and fully combined.
  • Add gluten-free rice krispie cereal and stir until fully coated.
  • Press the mixture evenly into a parchment-lined 9×13-inch pan using a spatula or clean hands.
  • Melt chocolate chips in a microwave-safe bowl or double boiler, stirring frequently until smooth.
  • Spread melted chocolate over the peanut butter layer evenly. Sprinkle with chopped nuts if using.
  • Let bars cool at room temperature for about 1 hour until chocolate is set. Cut into squares and serve.

Notes

Use sunflower seed butter for a nut-free version. Parchment paper helps with easy removal and clean slicing. Store covered at room temp or freeze for later.
