  • 1 cup butter, melted and slightly cooled adds moisture and richness

  • 1 tablespoon pure vanilla extract enhances flavor

  • 1 cup Dutch-processed or unsweetened cocoa powder adds rich chocolate flavor
  • 1 teaspoon espresso powder optional; intensifies chocolate flavor
  • 1 teaspoon kosher salt balances sweetness
  • 1 ¼ cups chopped chocolate divided; adds richness and texture

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Prepare a 9x13-inch baking pan by spraying it with nonstick cooking spray and lining it with parchment paper, then spraying it lightly again.
  • In a large mixing bowl, combine the melted butter with both types of sugar and whisk until fully dissolved, creating a smooth mixture.
  • Add the eggs and vanilla extract to the butter-sugar mixture, mixing until smooth and cohesive.
  • Sift in the flour and cocoa powder, adding salt and espresso powder. Gently fold until just combined, taking care not to overmix.
  • Fold in 1 cup of chopped chocolate, then pour the batter into the prepared pan, spreading evenly.
  • Sprinkle the remaining ¼ cup of chopped chocolate on top.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until set but slightly soft in the center. A toothpick inserted should come out with a few moist crumbs.
  • Allow the brownies to cool in the pan before slicing them for cleaner squares.
  • If desired, sprinkle a pinch of flaky sea salt on top before serving.

Notes

Allow brownies to cool completely for better slicing. These brownies can be stored at room temperature for up to four days, or refrigerated for a week. For longer storage, freeze wrapped individual brownies.
